These cookies are a delicious and guilt-free treat, perfect for those avoiding gluten, wheat, and refined sugar. They rely on the natural sweetness of maple syrup and the richness of 100% cocoa powder and peanut butter.

Ingredients:

  • 1 large egg
  • 1/4 cup unsweetened applesauce (optional, for extra moisture - can omit and slightly increase coconut oil if needed)
  • 1/4 cup melted coconut oil, cooled slightly
  • 1/4 cup maple syrup
  • 1/4 cup 100% natural peanut butter (ensure it's just peanuts and maybe salt)
  • 1/4 cup 100% unsweetened cocoa powder
  • 1 teaspoon gluten-free vanilla extract (optional, but enhances flavor)
  • 1/2 teaspoon baking soda (ensure it's gluten-free if certified)
  • Pinch of salt
  • 1 1/2 cups gluten-free rolled oats (not instant)

Instructions:

Step 1: Whisk Wet Ingredients

In a medium bowl, whisk together the egg and unsweetened applesauce (if using).

Step 2: Add Remaining Wet Ingredients

Add the slightly cooled melted coconut oil, maple syrup, and peanut butter to the bowl. Whisk until well combined and smooth.

Step 3: Incorporate Dry Ingredients

In the same bowl, add the cocoa powder, gluten-free vanilla extract (if using), baking soda, and salt. Stir until a thick, chocolatey batter forms.

Step 4: Fold in Gluten-Free Oats

Add the gluten-free rolled oats to the bowl. Gently fold them into the chocolate mixture until just combined. Be careful not to overmix.
